What's a good thing to do with black beans and/or garbanzo beans? We just got a ton of both in our farmshare box. We hardly ever cook with legumes, so I'm at a loss.
That garbanzo bean salad sounds great. Maybe I'll give that a try over the weekend. I was also contemplating hummus. Black beans are harder, because I don't really like black beans, but that pumpkin soup sounds worth a try (I do like pumpkin). Or my mom makes this black bean, corn, avocado and bell pepper salad that's pretty delicious, black beans notwithstanding.
Some things we like to make:
ReplyDeleteBlack beans: Black bean soup (I like this pumpkin black bean soup), rice and beans, put some in your salsa/chopped Mexican-ish salad.
Garbanzo beans: Minestrone soup, Moroccan stew with couscous and squash, roast them in the oven with some spices, make my favorite salad with these, scallion, a clove of raw garlic, lemon juice, olive oil, bell pepper, tomato, and cucumber. You can throw in some avocado too.
