Buttermilk pancakes from The Kitchn

Made these pancakes over the weekend. They were very good. The recipe made a ton -- we came out with 27 pancakes, and managed to eat half of them between the four of us. We often make pancakes on the weekend, and I usually try different recipes. Last weekend I made Marion Cunningham's recipe from The Breakfast Book -- first time I've had a recipe fail from that book, but they were flat and greasy. Maybe I did something wrong. They were edible and the kids ate them up, but they were probably the worst I've made. One of my favorites is actually the TJ's pumpkin pancake and waffle mix. That's the only mix I've tried.

Do you have a go-to pancake recipe? I haven't found one yet.

  1. We're big fans of the "Light and Fluffy Pancakes" recipe in the Cook's Illustrated "The New Best Recipe" book. I think this is it: http://www.tastebook.com/recipes/2608815-Light-and-Fluffy-Pancakes. We use buttermilk, and decrease the flour just a bit to make the pancakes a little less thick. I think you would probably end up with less than 27 (!) pancakes with this one -- the two of us can generally finish a batch of these (although it's a bit of a stretch), and it's about perfect for 3-4 people. Let me know if you try this one!

  2. No exotic ingredients and no beating egg whites! This is next on my list. (Although we're out of town next weekend, and we still have an entire batch of pancakes in the freezer for last weekend, so I might not get to this one for a few weeks.)

  3. Yes, super simple! I also like that they require less butter than a lot of other recipes.
